Caramel Color

Bake pie and tart crusts for a longer time than you think is really necessary. Rather than pale blonde, they should have a golden caramel color. The crust changes to the caramel color only after the sugar has had time to caramelize. This will give the crust the sweet flavor you want.

Meat should always be thinly sliced and cut on the bias if you are adding it to a stir-fry. Sometimes, however, this can be a little challenging and tedious. Take the meat out of the freezer when it’s firm to the touch, and slice across the grain at an angle of 45 degrees.

Use sharp knives to prepare your favorite meals. Dull knives make cutting very difficult, and this makes them much more dangerous than sharp knives. You can cut yourself so easily trying to force dull knives through something than it is to make a simple cut with a sharp one.

One way to make mashed potatoes retain their taste but contain a little less fat and calories is to replace some of them with equal amounts of cauliflower. Cauliflower has little taste of its own, so it will blend right into your potatoes and pick up flavors from whatever other ingredients you use. It also mimics the texture and color of the potatoes almost perfectly letting you up your vegetable intake, and drop the calories, all the while giving the same delicious potato experience we all know and love.
